Pat the fish fillets dry and season generously with salt, black pepper, and 1 teaspoon of cumin powder. Heat a generous amount of olive oil in a large skillet over medium-high heat. Fry the fish pieces for 2-3 minutes per side until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate lined with paper towels.

Caramelize the Onions
In the same skillet, add the remaining 1/2 cup of olive oil (if needed). Add the thinly sliced onions and a pinch of salt. Cook over medium-low heat, stirring occasionally, for 20-25 minutes until the onions are deeply caramelized to a rich dark golden brown. This slow caramelization is crucial for the Sayadieh's signature color and flavor.

Create the Aromatic Broth
Remove about half of the caramelized onions and set aside for garnish. To the remaining onions in the skillet, add the rest of the cumin, coriander, turmeric, allspice, and cinnamon. Stir well and cook for 1 minute until fragrant. Pour in the warm fish broth or water, bring to a simmer, and let it cook for 5 minutes to infuse the flavors. Season with salt to taste.

Cook the Rice
Add the drained basmati rice to the skillet with the onion broth. Stir gently to combine, ensuring the rice is evenly distributed. Bring the mixture to a boil, then reduce the heat to low, cover the skillet tightly, and let it simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender.

Rest and Fluff the Rice
Once the rice is cooked, remove the skillet from the heat but keep it covered for another 5-10 minutes. This allows the rice to steam further and become perfectly fluffy. After resting, gently fluff the rice with a fork.

Assemble and Serve
To serve, spoon the aromatic Sayadieh rice onto a large serving platter. Arrange the fried fish pieces on top of the rice. Garnish generously with the reserved caramelized onions, fresh chopped parsley, and toasted pine nuts or slivered almonds if desired. Serve immediately with a side of lemon wedges or a simple salad.
