Step by Step
1
Prepare the Chickpeas
Soak dried chickpeas in cold water overnight, at least 12 hours. Ensure they are fully submerged. Drain and rinse thoroughly before use. Using dried chickpeas is crucial for the authentic texture of falafel; do not substitute with canned chickpeas.

2
Make the Falafel Mixture
In a food processor, combine the drained chickpeas, fresh parsley, fresh cilantro, chopped onion, minced garlic, ground cumin, ground coriander, salt, black pepper, and cayenne pepper if desired. Pulse the mixture until it is finely ground but still has a coarse, sand-like texture. Be careful not to over-process into a paste.

3
Form the Falafel Patties
Transfer the falafel mixture to a bowl. Stir in the all-purpose flour and baking powder until well combined. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up, which helps prevent crumbling during frying. Using a falafel scoop or your hands, form small patties or balls, about 1 to 1.5 inches in diameter.

4
Prepare the Tahini Sauce
While the falafel mixture chills, prepare the tahini sauce. In a small bowl, whisk together the tahini paste, fresh lemon juice, minced garlic, and salt. Gradually add cold water, a tablespoon at a time, whisking continuously until the sauce achieves a smooth, creamy, and pourable consistency. Adjust water as needed for your preferred thickness.

5
Fry the Falafel
Heat vegetable oil in a deep pot or a sturdy deep fryer to 350-375°F (175-190°C). Carefully drop a few falafel patties into the hot oil, ensuring not to overcrowd the pot, which can lower the oil temperature. Fry for 3-5 minutes, turning them occasionally, until they are beautifully golden brown and crispy on all sides. They should be cooked through.

6
Assemble and Serve the Plate
Remove the fried falafel from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Serve the hot, crispy falafel immediately with warm pita bread, a side of fresh diced tomatoes and cucumbers, tangy pickled vegetables, and a generous drizzle of the prepared creamy tahini sauce. Garnish with fresh mint leaves for an added touch of freshness.
