Add the drained chickpeas to the tahini mixture in the food processor. Begin to process, scraping down the sides as needed. If the mixture seems too thick, add about half of the reserved chickpea liquid or a splash of ice water.

Continue processing, slowly adding the remaining ice water (or chickpea liquid) a tablespoon at a time, until the hummus reaches your desired creamy consistency. The ice water helps to emulsify the hummus and make it incredibly smooth and fluffy.

Once smooth, add the salt and ground cumin (if using). Process for another 30 seconds to ensure all seasonings are well incorporated. Taste and adjust seasoning as necessary, adding more lemon juice or salt to your preference.

Transfer the hummus to a serving bowl. Using the back of a spoon, create a swirl pattern on top. Drizzle generously with extra virgin olive oil, then sprinkle with paprika or sumac and fresh chopped parsley. Serve immediately with warm pita bread, fresh vegetables, or your favorite crackers.
