Step by Step
1
Prepare the Chicken
Pat the chicken cubes dry with paper towels. This helps the marinade adhere better and promotes a nice sear. Place the chicken in a large mixing bowl.

2
Mix the Marinade
In a separate bowl, combine the yogurt, olive oil, tomato paste, minced garlic, lemon juice, paprika, oregano, cumin, red pepper flakes (if using), salt, and black pepper. Whisk until all ingredients are well combined and form a smooth paste.

3
Marinate the Chicken
Pour the prepared marinade over the chicken cubes in the large bowl. Use your hands or a spoon to ensure every piece of chicken is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, for maximum flavor.

4
Skewer the Chicken
If using wooden skewers, ensure they have been soaked for at least 30 minutes. Thread the marinated chicken pieces onto the skewers, making sure not to pack them too tightly. Leave a small space between pieces for even cooking.

5
Grill or Bake the Skewers
Preheat your grill to medium-high heat (about 400F/200C) or your oven to 425F/220C. Grill the skewers for 15-20 minutes, turning every 4-5 minutes, until cooked through and nicely charred. If baking, place skewers on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden and cooked.

Rest and Serve
Once cooked, remove the Tavuk Sis from the grill or oven and let them rest for 5 minutes. This allows the juices to redistribute, ensuring tender and moist chicken. Serve hot with traditional Turkish sides like pilaf, fresh salad, or lavash bread.
