Prepare the Dough
Add the all-purpose flour, salt, and olive oil to the activated yeast mixture. Mix with a sturdy spoon or a dough hook on a stand mixer until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it becomes smooth, elastic, and no longer sticky.

Lightly grease a clean bowl with a little olive oil. Place the kneaded dough in the bowl, turning it once to coat all sides. Cover the bowl tightly with plastic wrap or a clean kitchen towel and let it rise in a warm, draft-free place for 1 to 1.5 hours, or until the dough has doubled significantly in size.

Prepare Dipping Mixture and Sesame Seeds
While the dough is rising, prepare two separate shallow dishes. In one dish, whisk together the grape molasses (or pomegranate molasses) and 1/2 cup of water until well combined. In the second shallow dish, spread the toasted sesame seeds evenly in a single layer.

Shape the Simit
Once the dough has risen, gently punch it down to release the air. Divide the dough into 8 equal pieces. Roll each piece into a long rope, approximately 18-20 inches (45-50 cm) long. Fold each rope in half, twist the two strands together, and then join the ends firmly to form a circular ring.

Dip and Coat
Preheat your oven to 400F (200C). Line a large baking sheet with parchment paper. Take each shaped simit ring and dip it first into the molasses-water mixture, ensuring it is fully coated. Immediately transfer it to the dish with sesame seeds, pressing gently on both sides to ensure a generous and even coating of seeds.

Bake the Simit
Place the coated simit rings on the prepared baking sheet, leaving some space between each one. Bake for 18-25 minutes, or until the simit are beautifully golden brown and crispy on the outside.
