Step by Step
1
Prepare the Cucumbers
Wash and peel the cucumbers. For a finer texture, you can deseed them by slicing lengthwise and scooping out the seeds with a spoon. Finely grate the cucumbers or dice them into very small pieces. Place the grated or diced cucumber in a clean kitchen towel or cheesecloth and squeeze out as much excess water as possible. This prevents the cacik from becoming watery.

Mince Garlic and Chop Mint
Peel and finely mince or crush the garlic cloves. Wash and finely chop the fresh mint leaves. If using dried mint, have it ready. Fresh mint provides a brighter flavor while dried mint adds a deeper, more traditional note.

Combine Ingredients
In a medium mixing bowl, add the strained yogurt. Add the squeezed cucumbers, minced garlic, chopped fresh mint, dried mint (if using), and salt. Mix all ingredients thoroughly with a spoon until well combined.

Adjust Consistency
Gradually add cold water, a little at a time, while stirring, until the cacik reaches your desired consistency. Some prefer a thicker, dip-like consistency, while others prefer it slightly thinner, like a soup. Taste and adjust salt if necessary.

Chill and Allow Flavors to Mingle
Once mixed, cover the bowl with plastic wrap and refrigerate for at least 35 minutes. Chilling allows the flavors to meld beautifully and ensures the cacik is refreshingly cold when served. For best results, chill for an hour or more.

Serve and Garnish
Before serving, give the cacik a final stir. Ladle it into individual serving bowls or a large communal bowl. Drizzle generously with good quality extra virgin olive oil and garnish with a few fresh mint leaves or a sprinkle of dried mint and paprika if desired. Serve immediately.
