In a large pot or donabe (hot pot), combine 8 cups of water and the kombu. Let it sit for at least 30 minutes, or ideally, overnight in the refrigerator for maximum flavor extraction. Slowly heat the pot over medium-low heat. Just before the water comes to a boil, remove the kombu. Do not boil the kombu as it can make the broth bitter. Keep the broth simmering gently.

Prepare Vegetables and Tofu
While the dashi is preparing, wash and prepare all your vegetables. Cut the napa cabbage into bite-sized pieces. Trim the stems from shiitake mushrooms and score the caps if desired. Trim the root end of enoki mushrooms and separate them into smaller clumps. Peel and thinly slice the carrot, or use a cookie cutter for decorative shapes. Cut the tofu into 1-inch cubes. Arrange all prepared vegetables and tofu aesthetically on a large platter.

Arrange the Beef
Carefully separate the very thinly sliced beef and arrange it neatly on a separate platter. Ensure the slices are easy to pick up individually. Keep the beef refrigerated until just before serving to maintain its freshness.

Place the hot pot (donabe or electric hot pot) with the simmering dashi broth in the center of your dining table. Arrange the platters of beef, vegetables, and tofu around the hot pot. Provide individual dipping bowls for each diner, along with small plates for cooked ingredients and serving utensils like chopsticks or small tongs.

Once the broth is simmering gently, diners can begin cooking.
