Turn onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Cover with a clean cloth and let rest for 10 minutes.

Divide the rested dough into two equal pieces. On a well-floured surface, roll out each piece very thinly into a large rectangle, about 1/16 inch thick.
