Step by Step
1
Prepare Chickpeas
Drain and rinse the canned chickpeas thoroughly under cold water. For an ultra-smooth hummus, you can optionally remove the skins from the chickpeas by gently rubbing them between your fingers. This step requires a bit of patience but yields a superior texture. Set aside.

Combine Main Ingredients
In the bowl of a food processor, combine the drained chickpeas, tahini, freshly squeezed lemon juice, minced garlic, salt, and ground cumin (if using).

3
Process Until Smooth
Process the mixture, scraping down the sides of the bowl as needed. While the processor is running, slowly add the cold water (or reserved chickpea liquid) through the feed tube, a tablespoon at a time, until the hummus reaches your desired creamy and smooth consistency. This usually takes about 3-5 minutes of continuous processing.

4
Adjust Seasoning
Stop the food processor and taste the hummus. Adjust seasonings as necessary, adding more salt, lemon juice, or tahini to achieve your preferred balance of flavors. If you prefer a lighter, airier texture, you can add a touch more water and process briefly again.

5
Transfer and Chill
Transfer the prepared hummus to a serving bowl. Cover it tightly with plastic wrap and refrigerate for at least 15-20 minutes. Chilling allows the flavors to meld beautifully and enhances the overall taste.

Garnish and Serve
Before serving, remove the hummus from the refrigerator. Create a shallow well or swirl on the surface of the hummus using the back of a spoon. Drizzle generously with extra virgin olive oil and sprinkle with paprika or sumac for color and a subtle tangy kick. Serve immediately with warm pita bread, fresh vegetable sticks, or as part of a mezze platter.
