Drain the tofu block thoroughly. Wrap it in several layers of paper towels or a clean kitchen towel and place a heavy object on top for at least 20-30 minutes to press out excess water. This step is crucial for firm tofu and better absorption of the sauce. Once pressed, slice the tofu into 1/2-inch thick rectangles.

Pan-Fry the Tofu
Heat 2-3 tablespoons of cooking oil in a non-stick pan over medium-high heat. Carefully place the sliced tofu in a single layer, making sure not to overcrowd the pan. Fry for 3-4 minutes per side until golden brown and slightly crispy. Remove the fried tofu from the pan and set aside on a plate lined with paper towels to absorb excess oil.

Prepare the Braising Sauce
In a medium bowl, combine the Korean soy sauce, gochugaru, gochujang, minced garlic, sesame oil, sugar, and mirin. Whisk until all ingredients are well combined and form a smooth paste. This is the heart of your Dubu Jorim.

Sauté Aromatics and Arrange Tofu
If using, add a little more oil to the pan (if needed) and sauté the thinly sliced onion and Korean radish for 2-3 minutes until slightly softened. Arrange the pan-fried tofu slices neatly over the aromatics (or directly in the pan if not using them). Pour the prepared braising sauce evenly over the tofu.

Simmer to Infuse Flavors
Pour 1 cup of water or vegetable broth into the pan. Bring the liquid to a gentle boil, then reduce the heat to medium-low. Cover the pan and let the tofu simmer for 15-20 minutes, or until the sauce has thickened and the tofu has absorbed the flavors. Occasionally spoon the sauce over the tofu during simmering.

Finish and Garnish
Uncover the pan. Stir in half of the sliced green onions and continue to simmer for another 2-3 minutes to allow the flavors to meld further and the sauce to reduce slightly if desired. Transfer the Dubu Jorim to a serving plate or bowl. Garnish with the remaining fresh green onions and a sprinkle of toasted sesame seeds.
