Step by Step
1
Prepare Milk Ice or Regular Ice
For milk ice, pour whole milk into an ice tray and freeze for at least 6 hours or overnight until solid. If using a bingsu machine that requires frozen milk blocks, freeze the milk in a suitable container. Alternatively, prepare regular ice cubes.

2
Prepare Sweet Red Beans (Pat)
If using canned sweet red beans, drain any excess liquid if desired, or use as is. If making from scratch, ensure they are cooked until soft and sweetened to your preference. Set aside.

3
Prepare Toppings
Dice your chosen fresh fruits into small, bite-sized pieces. If using mini mochi, ensure they are soft and chewy. If they are hard, you can briefly microwave them for 10-15 seconds until pliable. Arrange all toppings neatly.

4
Shave the Ice
Using a bingsu machine or a powerful blender with an ice-shaving attachment, shave the frozen milk or regular ice into fine, fluffy flakes. For a blender, pulse the ice until it reaches a snow-like consistency. Divide the shaved ice into individual serving bowls.

5
Assemble Patbingsu
Evenly distribute the prepared sweet red beans over the shaved ice in each bowl. Arrange the mochi and fresh fruit around the red beans or on top. For an extra touch, sprinkle with roasted soybean powder if using.

6
Drizzle and Serve
Generously drizzle sweetened condensed milk over all the toppings and shaved ice in each bowl. Serve immediately with a long spoon, allowing everyone to mix and enjoy the refreshing layers of flavor and texture.
