Prepare and Cook the Rice
Rinse the short-grain rice thoroughly until the water runs clear. Combine the rinsed rice with 2 cups of water in a rice cooker or a pot. Cook according to your rice cooker's instructions or bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed. Let it rest for 10 minutes, then fluff with a fork.

Marinate and Cook the Beef
In a bowl, combine the thinly sliced beef with 2 tbsp soy sauce, 1 tbsp sesame oil, 2 minced garlic cloves, and 1 tsp sugar. Mix well and let it marinate for at least 10 minutes while you prepare other ingredients. Heat a lightly oiled pan over medium-high heat and stir-fry the marinated beef until fully cooked and lightly browned, about 3-5 minutes. Set aside.

Prepare and Sauté the Vegetables
Blanch the spinach and bean sprouts separately in boiling water for 30 seconds, then immediately drain and rinse with cold water. Squeeze out excess water. Season each with a pinch of salt and a drizzle of sesame oil. In the same pan used for beef (or a clean one), lightly sauté the julienned carrots, zucchini, and sliced shiitake mushrooms separately with a little oil and a pinch of salt until tender-crisp. Set each vegetable aside.

Fry the Eggs
Heat a small amount of oil in a non-stick pan over medium heat. Carefully crack each egg into the pan and fry sunny-side up, or to your preferred doneness, ensuring the yolk remains runny for mixing into the Bibimbap. Cook one egg per serving.

Make the Bibimbap Sauce
In a small bowl, combine the gochujang, 2 tbsp sesame oil, 1 tbsp sugar, 1 tsp minced garlic, and optional 1 tsp rice vinegar. Mix thoroughly until all ingredients are well combined and the sauce is smooth. Taste and adjust sweetness or spiciness as desired.

Assemble the Bibimbap Bowls
To assemble, spoon a generous portion of cooked rice into the bottom of each serving bowl. Artfully arrange small piles of each prepared vegetable (spinach, carrots, zucchini, mushrooms, bean sprouts) and the cooked beef around the rice. Place a fried egg on top of the rice in the center. Serve immediately with a dollop of the Bibimbap sauce on the side or directly on top, and sprinkle with toasted sesame seeds. Encourage diners to mix everything together before eating.
