Prepare Your Equipment
Ensure your espresso machine is fully heated and ready. Pre-heat your demitasse cup by filling it with hot water from the machine, then empty it just before brewing.

Grind the Coffee Beans
Grind your fresh espresso beans just before brewing. The grind should be very fine, resembling powdered sugar or flour, to achieve the proper extraction. Adjust as needed for your specific machine.

Dose and Tamp
Place the freshly ground coffee into the portafilter basket. Distribute the grounds evenly, then tamp firmly and level with about 20-30 pounds of pressure. Wipe any excess grounds from the rim of the portafilter.

Purge the Group Head
Before inserting the portafilter, briefly run the hot water through the group head for a few seconds. This flushes out old coffee grounds and ensures the water is at the correct temperature.

Brew the Espresso
Immediately lock the portafilter into the group head and begin the brewing process. The espresso should flow out in a steady, thin stream, resembling warm honey, for about 25-30 seconds, yielding approximately 30 ml (1 oz) of liquid.

Serve Immediately
Once brewed, serve your classic Italian espresso immediately in the pre-heated demitasse cup. Observe the rich, reddish-brown crema on top, a sign of a perfectly extracted shot. Enjoy its intense aroma and bold flavor.
