In a small bowl, combine olive oil, salt, and black pepper. Squeeze the juice of half a lemon into the mixture. The fish is cooked when the skin is beautifully charred and crispy, and the flesh easily flakes with a fork at its thickest part. The internal temperature should reach 145°F (63°C). If you have a meat thermometer, insert it into the thickest part of the fish, avoiding the bone.
