Prepare the Tofu
Press the extra-firm tofu for at least 30 minutes to remove excess water. This helps the tofu absorb the sauce better and gives it a firmer texture. Slice the pressed tofu into 1/2-inch thick rectangles.

Pan-Fry the Tofu
Heat cooking oil in a large non-stick pan over medium-high heat. Carefully place the tofu slices in a single layer and pan-fry for 3-4 minutes per side, until golden brown and slightly crispy. Remove the tofu from the pan and set aside.

Prepare the Braising Sauce
In a bowl, combine the water or vegetable broth, soy sauce, gochugaru, minced garlic, sesame oil, and sugar or rice syrup. Whisk well until the sugar is dissolved and all ingredients are thoroughly mixed.

Arrange Tofu and Add Sauce
In a shallow pot or a deep pan, arrange the pan-fried tofu slices in a single layer. If using, scatter the thinly sliced onion around the tofu. Pour the prepared braising sauce evenly over the tofu.

Braise the Tofu
Bring the sauce to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes. Periodically spoon the sauce over the tofu to ensure even flavoring, until the sauce has reduced and thickened slightly.

Garnish and Serve
Once the sauce has reached your desired consistency, remove the pot from the heat. Garnish generously with sliced green onions and toasted sesame seeds. Serve immediately as a delicious side dish with warm rice.
