Prepare Chickpeas
If using canned chickpeas, rinse them thoroughly under cold water and drain. For an extra smooth hummus, gently pinch and remove the skins from each chickpea. This step is optional but highly recommended for superior texture.

Combine Main Ingredients
In a food processor, combine the rinsed chickpeas, tahini, fresh lemon juice, minced garlic, and salt. Add half of the cold water or reserved chickpea liquid.

Blend Until Smooth
Process the mixture on high speed, scraping down the sides of the bowl as needed. Continue blending until the mixture is very smooth and creamy, about 3-5 minutes. The longer you blend, the creamier your hummus will be.

Adjust Consistency
While the processor is running, slowly add the remaining cold water or chickpea liquid, one tablespoon at a time, until the hummus reaches your desired velvety consistency. It should be light and airy, not too thick.

Taste and Season
Taste the hummus and adjust seasonings as needed. You might want to add more salt, lemon juice, or even a tiny bit more garlic for your preference. Blend again briefly to incorporate.

Serve and Garnish
Transfer the hummus to a serving bowl. Create a swirl on top with the back of a spoon. Drizzle generously with extra virgin olive oil, sprinkle with paprika, and garnish with fresh chopped parsley. Serve immediately with warm pita bread, fresh vegetables, or as part of a mezze platter.
