Take the chilled topping dough and divide it into 8 equal portions. Flatten each portion into a thin disc, about 4-5 inches in diameter. Carefully place one topping disc over each bun dough ball. Gently press down and smooth the edges to adhere the topping. You can use a knife to score a criss-cross pattern on the topping to mimic a pineapple skin.

Cover the topped buns loosely with plastic wrap and let them rise again in a warm place for another 30-45 minutes, or until visibly puffy. Preheat your oven to 180°C (350°F). Just before baking, gently brush the topping with a thin layer of beaten egg for a golden sheen.
