Pour the freshly squeezed lime juice over the chopped shrimp, ensuring all the shrimp pieces are fully submerged in the juice. Stir gently. Place the bowl in the refrigerator and let the shrimp marinate for at least 30 minutes, or until the shrimp turn opaque and pink, indicating they are "cooked" by the acid. Stir occasionally.

Prepare the Vegetables
While the shrimp is marinating, prepare your vegetables. Finely dice the red onion, tomatoes, and cucumber. Mince the serrano pepper (remove seeds for less heat) and chop the fresh cilantro. For a milder flavor, you can rinse the diced red onion in cold water for a few minutes and drain well before adding.

Combine Ingredients
Once the shrimp is fully "cooked" by the lime juice, drain off about half of the excess lime juice from the bowl, leaving some for flavor and moisture. Add the diced red onion, tomatoes, cucumber, minced serrano pepper, and chopped cilantro to the bowl with the shrimp.

Gently stir all the ingredients together until well combined. Season the ceviche with salt and freshly ground black pepper to taste. Taste and adjust seasoning as needed.
