Keep the broth simmering gently.

Prepare Vegetables and Tofu
While the kombu soaks and broth heats, prepare your vegetables. Wash and cut the napa cabbage into 2-inch pieces. Trim the stems from shiitake mushrooms and separate enoki mushrooms. Peel and thinly slice carrots. Cut the tofu into 1-inch cubes and slice scallions into 2-inch segments.

Artfully arrange the thinly sliced beef, prepared vegetables, and tofu on large platters. Keep the beef separate from the vegetables to prevent cross-contamination and make it easy for guests to select their items. This presentation is key to the Shabu Shabu experience.

Place the hot pot with the simmering dashi broth in the center of your dining table, ideally on a portable burner or induction cooktop. Cooking and Dipping
Each diner uses chopsticks to pick up a slice of beef and swish it in the simmering broth for about 10-20 seconds until it changes color and is cooked to their liking. The term Shabu Shabu mimics the sound of swishing. Dip the cooked beef into your preferred sauce. Follow the beef with vegetables and tofu, cooking them until tender but still slightly crisp. Savoring the Final Broth
