Step by Step
1
Prepare the Dashi Broth
Gently wipe the kombu with a damp cloth, do not wash. Place the kombu and water in a large pot or donabe (Japanese clay pot). Let it soak for at least 30 minutes, or even overnight in the refrigerator for richer flavor. Slowly bring the water to a gentle simmer over medium-low heat. Remove the kombu just before the water boils to prevent bitterness. Keep the broth simmering gently.

Prepare Vegetables and Tofu
While the kombu soaks, prepare all your vegetables. Wash and cut the napa cabbage into bite-sized pieces. Trim the stems from shiitake mushrooms and score a cross on the caps for decoration and flavor absorption. Trim the root ends of enoki mushrooms and separate them into small clusters. Peel and thinly slice carrots. Cut tofu into 1-inch cubes. Arrange all prepared ingredients attractively on platters.

Arrange Beef and Dipping Sauces
Carefully arrange the thinly sliced beef on a separate platter. Ensure the slices are separated for easy grabbing. Pour ponzu sauce and sesame sauce into individual small bowls for each diner. You may also offer finely chopped scallions, grated daikon, or shichimi togarashi as optional garnishes for the dipping sauces.

Cook and Enjoy Shabu Shabu
Once the broth is simmering gently, diners can begin cooking. Each person takes a slice of beef with their chopsticks and swishes it in the hot broth for just a few seconds until it changes color and is cooked to their liking. The name Shabu Shabu comes from the 'swish-swish' sound it makes. Dip the cooked beef into your preferred sauce and enjoy.

6
Add Vegetables and Tofu
After enjoying some beef, add the vegetables and tofu to the simmering broth. Heartier vegetables like napa cabbage and carrots can go in first, followed by mushrooms and tofu. Cook until tender, then retrieve them with your chopsticks, dip in sauce, and eat. Continue adding ingredients as desired, maintaining a gentle simmer.

Finish with Noodles or Rice
Towards the end of the meal, after all the main ingredients have been cooked, the broth will be rich with flavor. You can add udon noodles to cook directly in the broth, or serve the broth over cooked rice to enjoy the delicious essence of the meal. This is a satisfying way to conclude the hot pot experience.
